Every bartender wants to open their own bar at some point. In our first menu, for example, we had classic drinks, like the Brandy Crusta and Julep. And 2013 was our first time on the World’s 50 Best Bars list. I worked in a few other bars but I knew I really wanted to open my own cocktail place. And this is what we did.

Though not created by him, the blend first gained popularity courtesy of Blake Riber’s Bourbonr blog, circa 2013. The same taters that decried the shameless tater baiting and money grabbing also pursued it — or at least tried to to talk bartenders into letting them get a photo of a bottle to flex. It didn’t matter.

Christoph Dornemann, Head Bartender at Arnaud’s French 75 Bar in New Orleans, Louisiana, began his career in the industry waiting tables at a Vietnamese restaurant in 2010. Peruvian Pisco in particular — and for the purposes of this story the term “ Pisco ” will refer to Peruvian Pisco rather than the Chilean distillate of the same name — in theory ticks a lot of boxes for both bartenders and spirits enthusiasts. For one, like other grape-based brandies, Pisco has a season. It’s clear.
