Cannon Distillery founder Kris Kincaid established his Avondale-based operation in 2017, focusing on craft cocktail-friendly spirits under Master Distiller Roderick Hale Waver. Virgil Kaine, founded in 2011 by Charleston chefs Szlam and Ryan Meany, has released eight limited-edition whiskeys since its inception.

In its most recent incarnation, which lasted until 2017, Peacock Alley sat opposite the front desk and seating was behind a partitioned area. To steer the cocktail program at the reborn Peacock Alley, the hotel turned to renowned bartender Jeff Bell, who owns PDT, one of the bastions of the modern craft cocktail era in New York.
