Launched in the first few years of the cocktail renaissance, St-Germain was the worlds first commercial elderflower liqueur and one of the first high-quality, artisan liqueurs to hit the market in decades. There, the liqueur quickly became a steady fixture behind the bar. The timing couldnt have been better.

In 2016, I opened ROKC (Ramen Oysters Kitchen Cocktails) in Hamilton Heights, and following its success, I opened NR (’N ROLL) on the Upper East Side in Fall of 2019. For a fat-washed cocktail, I think spirits that can be drank at room temperature like whiskey, rum, brandy, and Anejo tequila, as well as some liqueurs, work best.

In 2019, Copperworks acquired brandy casks from Cadiz, Spain, and we filled one with gin. They focus on creating distilled spirits that can stand impressively on their own or serve as a delicious base for new and classic cocktails. After over two years, the flavors from the cask were vibrant but needed more time to integrate.
