When the Navy was conducting voyages in the Caribbean in the 16 and 1700s they found themselves a plentiful supply of rum. With a much longer shelf life than beer, rum became the sailors’ first choice of tipple. The rum and lemon/lime juice concoction became known as ‘Grog’. Essentially, hungover. This, of course, is disputed.

Then banana flambéed, coconut… Then some high-end wine (great old Pomerol – no, not just any merlot)… Then chicory… Then lots of pineapple liqueur, Malibu, old Muscat wine. Raisins, quince jelly, very old rum. Nose: extreme beehive, wax, propolis, old papers… Mirabelle jam, quince jelly… absolutely brilliant.

The Ledaig Triple Wood is a blend of whiskies matured in three types of casks: wine, bourbon, and port. The whisky was also matured in “a three-cask finish of bold provenance”, with the liquid divided tin three different types of casks for finishing: Bordeaux wine, Calvados, and Guatemalan rum.

The cask used for finishing will usually have previously held a different type of spirit, wine, or other liquid. The Balvenie 14 Year Old Caribbean Cask Whisky is transferred into ex-rum casks. Sherry casks are the most common, but there are plenty of examples of other cask varieties being used.
