However, rum is the true calling of this southern distillery. Sugarfield does most of their premium rum distillation with a copper pot still, as the spirit comes off around 165 to 170 proof. One criticism of the rum industry is the lack of transparency regarding whether or not sugar is added to the spirit before bottling.

This years Master Blender Collection is meant to offer a glimpse into how rum was made back in the 19th century when the coffey still was invented. The single batch of copper coffey still rum has aged in St Lucy, Barbados for four years in heavily charred ex-bourbon casks, bringing out rich oak and honey notes, the distillery reports.

All 700ml bottles. El Amparo Rum – Pot still rum (amparo means “shelter” in Spanish) produced in Jipijapa, Ecuador from fresh Cubana Negra sugar cane juice. Bottled unaged and at still strength, this is the first batch of rum from a 60 year old distillery available in the U.S. 115 proof.
