When Aviation American Gin first hit shelves in 2006, it was something of a novel spirit. Unlike the juniper-forward London dry gins that had long dominated the market, Aviation brought other botanicals to the forefront, with its prominent citrus, spice, and floral notes. Marketed as American-style gin, the new spirit sparked a sea change among domestic craft distillers, who began to experiment more and more with distillations representing their home terroir.

The New Illinois Beer Label of the Week: 93 Octane does a lot to pair beers with car styles or car-centric stuff (see also: their various oil-weight stouts like the 10W30 ) and you can’t tell me that a muscled-out clown car isn’t the perfect vehicle for something pumpkin spiced.

Mount Gay launched its Single Estate Series rum last year to great acclaim, the end-product of an eight-year journey that began with acquiring its own 324-acre sugar cane estate in 2015 and using that cane to make its own molasses, ferment its own juice, distill rum from that juice, and age it in barrels — all on site. (Master blender Trudiann Branker says it’s a four-hour drive from cane to still, showcasing how close these elements are.
